National Coffee Cake Day is Sunday, April 7, and what better way to celebrate this sweet treat than by making your own baked goods? Here are some yummy coffee cake recipes to try in honor of this sweet holiday.

New York-Style Crumb Cake

Grab yourself a cup of coffee and start making this moist cake from scratch!

CRUMB TOPPING:

  • ⅓ cup granulated sugar
  • ⅓ cup dark brown sugar
  • ¾ tsp cinnamon
  • ⅛ tsp table salt
  • 8 tbsp butter, melted and still warm
  • 1 ¾ cups flour

CAKE:

  • 1 ¼ cups flour
  • ½ cup granulated sugar
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 6 tbsp butter, softened and cut into six pieces
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla extract
  • ⅓ cup liquid buttermilk
  • Confectioners’ sugar (for dusting)

DIRECTIONS:

  1. For topping: Whisk all the sugars, cinnamon, butter, and salt in medium bowl, adding flour and stirring until the mixture is a thick, cohesive dough. Cool for 15 minutes.
  2. For cake: Heat oven to 325° F. Cut 16-inch parchment paper, folding lengthwise to seven-inch width. Spray an eight-inch square baking dish and place parchment into dish. Excess should overhang edges of the dish.
  3. In a mixer, mix flour, sugar, salt, and baking soda on low speed, adding butter one piece at a time. Beat until you get moist crumbs, about two minutes. Then add egg, yolk, buttermilk, and vanilla, beating on medium-high speed until fluffy.
  4. Transfer batter to pan, breaking apart crumb topping into large pieces; spread in even layer.
  5. Bake until golden, about 40 minutes. Cool for a half hour, then remove the cake by grasping the parchment overhang.
  6. Before serving, dust with confectioners’ sugar.

Coffee Cake With Glaze

This recipe will take you 20 minutes to prepare, with a total time of one hour. You will need a 9×13 bake pan, and a stand or hand mixer.

Streusel Ingredients:

  • 3/4 cups walnuts or pecans (optional)
  • 3/4 cups sugar
  • 1 tsp cinnamon

Cake Batter Ingredients:

  • 3 1/3 cups flour
  • 1 1/2 tsp salt
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 3/4 cups buttermilk
  • 3/4 cups cold, strong coffee
  • 2 tsp vanilla
  • 1 1/2 sticks soft unsalted butter
  • 1 3/4 cups sugar
  • 3 eggs

Glaze Ingredients:

  • 1/4 cup coffee
  • 2 1/2 cups powdered sugar

Directions:

  1. For the streusel: Mix the nuts with the sugar and cinnamon and aside.
  2. Once the coffee is brewed, cool it in the fridge.
  3. Mix the flour, baking powder, salt, and baking soda in a bowl.
  4. Beat the butter and sugar with a mixer until fluffy, adding the eggs one at a time and adding the vanilla.
  5. Mix dry and liquid ingredients into the creamed butter.
  6. Add half the batter to the pan, pouring the streusel mixture on top; add the rest of the batter.
  7. Bake at 350 degrees for about 35 minutes.
  8. Let cool for an hour and make the glaze.
  9. Combine powdered sugar and coffee until smooth.
  10. Pour the glaze on the cake when ready to serve.

Cinnamon Crumble Coffee Cake

Made with whole wheat flour, this cake has a heartier texture than traditional coffee cake.

You will need:

  • 1/2 cup light virgin olive oil
  • 1 cup sugar
  • 2 eggs
  • 1 cup non-dairy milk such as plain unsweetened almond
  • 1 tbsp apple cider vinegar
  • 1 1/2 cups flour
  • 1 1/2 cups whole wheat flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg

Streusel:

  • 1/2 cup brown sugar
  • 1/2 cup chopped walnuts
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg

Instructions

  • Preheat oven to 350 degrees, then spray bundt pan and set aside.
  • For the vegan buttermilk, whisk the non-dairy milk with the apple cider vinegar and set aside.
  • Mix oil, sugar, and eggs in a bowl, whisking in the milk mixture.
  • Combine flours, baking powder, salt, nutmeg, and cinnamon in another bowl, whisking to combine.
  • Add dry ingredients to the wet.
  • Mix the brown sugar, walnuts, cinnamon, and nutmeg in a bowl.
  • Layer into the pan (i.e., 1/2 batter, 1/2 streusel, etc.), then top with the remaining streusel.
  • Bake for one hour and cool for 10.
