s'mores brownies on a kitchen plate for National Brownie Day

Brownies are a beloved treat that nearly everyone loves. They’re chocolatey, gooey, cakey, and delicious. They’re easy to make, and are easily transportable to parties, gatherings, work events, picnics, and so much more. If you love brownies, you’ll love to hear that December 8 is National Brownie Day.

In honor of National Brownie Day, we’re here to provide some recipes for you and your preschooler that put a unique spin on this classic treat.

Caramel Popcorn Brownies

Top these brownies with popcorn, nuts, peanut butter chips, peanuts, caramel, and chocolate chips for a sweet treat you won’t be able to resist.

You will need:

  • 1 package brownie mix
  • ¼ cup vegetable oil
  • ¼ cup water
  • 1 egg
  • 3 cups popped popcorn
  • ½ cup peanuts
  • ½ cup peanut butter chips
  • ½ cup chocolate chips
  • ½ cup butter
  • ½ cup brown sugar

Directions:

  1. Preheat oven to 325 degrees F, then grease a 9×13-inch baking dish.
  2. Stir brownie mix, water, egg, and oil in a bowl, then pour the batter in a thin layer into the baking dish.
  3. Spread popcorn over the batter, lightly pressing it in.
  4. Sprinkle peanuts, peanut butter chips, and chocolate chips over the popcorn.
  5. Melt butter on medium heat in a small saucepan.
  6. Whisk brown sugar into the butter, then bring to a boil.
  7. Be sure to whisk constantly until the mixture has a thin caramel texture (three minutes or so).
  8. Drizzle caramel over the popcorn mixture.
  9. Bake for about 30 to 35 minutes.
  10. Allow to cool, then cut into bars.

Chunky Cheesecake Brownies

You won’t soon forget these melt-in-your-mouth chocolate brownies marbled with cheesecake.

You will need:

  • 1 (8 ounce) package of softened cream cheese
  • ¼ cup sugar
  • 1 egg
  • 1 cup semisweet chocolate chips
  • ¼ cup butter
  • 1 cup semisweet chocolate chips
  • ½ cup sugar
  • 2 eggs
  • ⅔ cup all-purpose flour
  • ½ baking powder
  • ¼ salt

Directions

  1. Preheat oven to 350 degrees F, then grease a 9-inch square baking pan.
  2. In a bowl, mix cream cheese with 1/4 cup of sugar and an egg, beating until smooth.
  3. Stir in one cup of chocolate chips into the mixture; set aside.
  4. Boil a saucepan of water, then turn the heat off. Place a heatproof mixing bowl on top of the water. Mix butter with the remaining chocolate chips in the bowl, stirring until melted.
  5. Mix in the remaining 1/2 cup of sugar and two eggs; sift flour, baking powder, and salt together, then stir into the chocolate until blended.
  6. Pour half the batter into the baking pan, spreading the cream cheese over the chocolate layer. Top with the remaining chocolate mixture.
  7. With a knife, start swirling the top chocolate layer in a marble pattern inside the cream cheese.
  8. Bake at 350 degrees for 30 minutes; allow to cool.
  9. Cut into squares and serve, store in the fridge or freeze.

S’more Brownies

Enjoy the deliciousness of this popular campfire treat when you bake brownie s’mores.

You will need:

Brownies:

  • 1 box fudge brownie mix
  • ½ cup vegetable oil
  • 2 eggs
  • 3 water

S’Mores Topping:

  • 6 graham crackers
  • 1 ½ cups mini marshmallows
  • 8 bars milk chocolate, chopped

Directions:

  1. Preheat the oven to 350 degrees F, then grease a 9×13-inch baking dish.
  2. Make the brownies as directed, then pour batter into the pan.
  3. Bake for 15 minutes.
  4. For the topping: Break graham crackers into one-inch pieces and put in a bowl, then add marshmallows and chocolate; toss to combine.
  5. Take brownies from the oven, then sprinkle with topping.
  6. Place back into oven and bake for seven to 10 more minutes.
  7. Slice and serve.
