Not all dessert treats are created equal. Some desserts appeal to adult palates, but not so much for kids – and vice versa. Today we’ll be exploring kid-approved dessert treats that are sure to please the littles, from toddlers to preschoolers and beyond.
Brownie Ice Cream Sandwiches
These delicious and decadent brownie ice cream sandwiches can be topped with sprinkles and popped in the freezer till you’re ready to enjoy them.
You will need:
- I box brownie mix
- Ingredients called for on the box (vegetable oil, water, egg)
- 1pint vanilla ice cream (slightly softened)
Directions:
- Preheat oven to 350°F (325°F for dark or nonstick pan).
- Line nine-inch square pan with foil, greasing bottom and sides with shortening or cooking spray. Bake brownies according to box directions.
- Cool on rack for an hour and a half.
- Put pan of brownies in freezer for a half hour.
- Remove brownies from pan using the foil, then peel the foil away.
- Cut brownies into four-by-four rows.
- Spoon two tablespoons of ice cream on the bottom of one brownie square, then top it with another, bottom side down.
- Gently press together.
- Roll the sides in sprinkles and then place in a cookie sheet or shallow pan.
- Freeze up to two hours or until the ice cream is hard.
- Wrap each sandwich in clear plastic wrap and store in freezer till needed.
Chocolate Chip Cookie Cupcakes
This is a scrumptious blend of chocolate chip cookie mix and yellow cake mix, resulting in an easy-to-make treat that kids will love.
You will need:
- I pouch chocolate chip cookie mix
- 1 box yellow cake mix
- ½ cup softened butter
- 4 eggs
- ¼ cup vegetable oil
- 1 1/3 cups of water
- 1 tub vanilla frosting
Directions:
- Preheat oven to 375°F, placing paper baking cups in a 24 muffin cup pan.
- Make cookie mix according to directions, using the butter and one egg; refrigerate.
- Make cake mix batter according to directions, using three eggs, oil, and water.
- Take cookie dough out of refrigerator, pressing one tablespoon cookie dough in the bottom of each muffin cup.
- Top each one with two tablespoons of cake batter. Drop a few tbsp. of cookie dough on a small ungreased cookie sheet for the topping.
- Bake cupcakes for about 20 minutes.
- Bake cookies with cupcakes during the last 10 minutes of baking time.
- Take cupcakes out of muffin cups and cookies from cookie sheet, and set on cooling racks.
- Cool for 45 minutes.
- Frost the cupcakes with frosting, topping each with crumbled baked cookies.
Monster Cookie Bars
These chewy monster cookie bars contain all the goodness and taste of cookies but in bar form. Packed with peanuts, oats, chocolate chips, and M&M’s®, you will enjoy the perfect balance of salty and sweet. Enjoy as a midday snack, or for dessert after dinner topped with some vanilla ice cream.
You will need:
- 1 pouch peanut butter cookie mix
- Vegetable oil, egg and water as called for on cookie mix pouch
- 2/3 cup peanut butter (creamy)
- 1 cup old-fashioned oats
- 1/2 cup M&M’s®
- 1/2 cup semisweet chocolate chips
- 1/3 cup cocktail peanuts (finely chopped)
Directions:
- Preheat oven to 350°F.
- Spray sides and bottom of 13×9-inch pan with cooking spray.
- Mix cookie mix, oil, egg, water, peanut butter and oats with a spoon in a large bowl, then stir in candies, peanuts, and chocolate chips.
- Press dough into the bottom of the pan.
- Bake for 16 to 20 minutes or until a light golden brown.
- Cool on cooling rack for one hour.
- Cut into six-by-four rows.
- Store in an airtight container.
Chocolate Milkshakes
You’ll need something to wash all these treats down with, and this thick chocolately shake recipe more than fits the bill. It doesn’t get any easier than this!
You will need:
- 3/4 cup milk
- 1/4 cup chocolate-flavored syrup
- 3 scoops vanilla ice cream
Directions:
- Place milk and syrup in a blender, then cover and blend on high speed for two seconds.
- Add the ice cream, then cover and blend on low speed for five seconds
- Pour into glasses and serve immediately.
